Sushi By Scratch

I wanted to try a unique omakase so I headed over to Sushi by Scratch, which does omakase a little bit differently. Filled with intriguing drizzles of sauces, toppings and preparations, you won’t find something like this anywhere else in the city.

Here are all the courses – with pictures below.

Shima Aji – fresno yuzu kosho, soy, lemon, salt. This one was a bit too spicy for me🥲.

Hokkaido Scallop – soy, ponzu, lemon juice, poblano yuzu kosho(pepper paste made in house). This one had a little kick to it but meshed well together.

Madai – sesame chili ponzu, lemon, salt, scallion.

Vancouver Spot Prawn – torched, ponzu, lemon, salt, Thai chili crisp, chive oil. I thought this was unique, meshing Thai flavors on a usually “clean” dinner, but I’m not mad at it.

Ora king Salmon – “wagyu of salmon”, olive oil, matcha sea salt, torched, soy, lemon, salt, pickled wasabi stem. You really can’t go wrong with piece of fish, it’s so soft.

Kinmedai – torched skin, soy, lemon, salt, tamarind chili jam, scallions.

Albacore – garlic confit and sake soaked nori sheet around it for a few days. Ponzu, wasabi, crispy onions.

Akami – soy, salt, wasabi, dry aged for 6 days.

Escolar – soy, torched, wasabi, ikura.

A5 Wagyu – soy, salt, wasabi.

Bone Marrow – salt and soy. This practically melted the second it hit my tongue.

Eel – bone marrow dripped on, soy, ponzu, salt, matcha salt, yuzu kosho, lemon. The eel was so buttery and soft and the toppings gave it extra flavor.

Sea urchin – hand roll, ponzu, wasabi, matcha salt

Matcha and dessert. Not the biggest matcha fan but this was a good dessert to end with after all the flavors on the fish.

Overall, it was very different experience and I’m glad I got to try it out. I do prefer a more simple, clean taste for my omakase but definitely worth checking out at least once!
